Sticky Fingers founder and vegan baker extraordinaire Doron Petersan proved that her cupcakes are sweet treats to be reckoned with when she and her head baker at Sticky Fingers, Jenny Webb, beat out the competition on the Food Network’s Cupcake Wars All-Stars on Sunday night.
“It is more difficult in this situation because when they give you the secret ingredients you don’t know what they are and you don’t always know if you are going to have access to certain things. Being vegan we are such the underdogs and it’s such a longshot for anyone to take us seriously so, to have this opportunity to be highlighted nationally and actually win up against traditional non-vegan baking is just everything that we could hope for,” Petersan tells Yeas & Nays.
So what’s the secret ingredient to their success? Petersan says it’s all science. “It’s all baking science and it’s all food chemistry — and that’s my forte. I am not a classically, professionally trained baker or chef at all nor do I claim to be. My history is nutrition and food science and so I can come up with the concepts and the ways to develop stuff or tweak stuff and we kind of redesign recipes so that they work for us.”
Over the last year, Petersan and her team have spent a great deal of time reworking and recreating recipes which she has complied in her first cookbook “Sticky Fingers’ Sweets! 100 Super-Secret Vegan Recipes.” The book is expected to hit stores on February 16.
