Paella Festival at Jaleo, through Sunday There’s an episode of “Seinfeld” where George’s mother prepares dinner for Jerry’s parents, only to have them cancel. Estelle Costanza asks George “What am I supposed to do with all this paella?”

If that gets your mouth watering, then head out to Jaleo’s Ninth Annual Paella Festival, at area locations through Sunday.

“It’s having a good product,” said Jaleo chef Ramon Martinez of what makes a good paella. “It’s having a good stock.”

Paella originates from the Valencia area of Spain, and the traditional offering includes chicken, rabbit, various types of beans and rice. Paella is now widely found in Spain and elsewhere, with varying recipes, including seafood and lamb creations.

“It’s become something more popular,” Martinez said of paella’s spread.

Jaleo has six styles of paella offered for the festival, including a seafood, lobster, octopus, pork, vegetable and traditional.

With a cooking time of around 30 minutes, just make sure to leave plenty of time to order.

“We’re trying to have a little bit from everywhere in Spain,” Martinez said.

An explanation may be in order. Sublime With Rome is essentially Sublime without deceased frontman Bradley Nowell. The band now employs Rome Ramirez as singer, but has to go by the mouthful “Sublime With Rome” for legal reasons. As for 311, nothing to explain there — their new album “Universal Pulse” just dropped.
