Chef Isabella has developed tasty creations that are inspired from the low-carb, high-protein Atkins Diet. Channeling his Mediterranean background as former chef at Zatinya, Isabella utilizes fresh foods and flavorful ingredients like swordfish, chicken, whole grains and fresh vegetables, like kale, cauliflower and asparagus. Wait, isn’t Atkins just bacon and eggs or a burger without the bun? No way! Think roasted cauliflower with tomato sauce and black olives or braised lamb shanks with spiced quince. Isabella is one of only five chefs tapped by Atkin’s Nutritionals to develop a menu around the basics of the diet. Will he bring these creations to his new restaurant, Graffiato?
