Culinary Institute to make beer in Hyde Park

ALBANY, N.Y. (AP) — The Culinary Institute of America now has permission to establish a brewery on its campus in the Hudson Valley community of Hyde Park.

The measure passed by the Legislature and signed by the governor authorizes the chef school, with teaching restaurants open to the public, to also manufacture and sell alcoholic beverages.

The brewery will be operated in conjunction with Brooklyn Brewery and is expected to open to the public next summer.

The institute intends to add courses in craft brewing.

Waldy Malouf, senior director of food and beverage operations at the CIA, says the microbrewery will teach students about fermentation, using grains in brewing, food pairings, and brewpub management.
